Soba noodles can be eaten all over Japan. Nagano Prefecture in particular has many famous soba-producing areas. Among them, the world-famous mountain resort of Hakuba is one of the soba spots that is well-known to those in the know. Surrounded by the majestic Northern Alps, the area has the perfect conditions for its cool climate and clear streams, which is what makes it so delicious. Soba Sake Bar Zen

The first place we will introduce is Zen, a soba bar and bar that has been repurposed from an old house that is over 100 years old and has a modern Japanese atmosphere.

While taking in the magnificent scenery of Hakuba, you can savor the fragrant, carefully selected 100% buckwheat soba (only available at lunchtime, in limited quantities) and the smooth, 28% buckwheat soba.
We also offer a selection of carefully selected items, mainly Nagano's local cuisine, as well as sake and shochu produced in Nagano, so we also recommend using the restaurant as an izakaya!

Soba Restaurant Riki

If you're going to eat soba in Hakuba, you'll want to try something made with locally grown buckwheat flour! Sobadokoro Riki uses 100% Hakuba-grown buckwheat flour that's freshly ground in a stone mill, so the noodles are chewy and sweet, and best of all, the broth, made with plenty of bonito flakes shaved in-store, brings out the flavor of the soba.

You can also try Hakuba Galette, a new Hakuba specialty made with local ingredients such as Shinshu salmon. Another attractive feature is the panoramic view of the Northern Alps from inside the restaurant. Soba Factory Ringosha

Located about a 3-minute walk from Happo Bus Terminal, the guesthouse Ringosha is famous for its soba kaiseki meals, but even non-guests can dine there during the lunch hours.

The most popular menu item is the "Soba Zanmai" set, which comes with three different sauces. The dipping sauce is made from a refined bonito stock, the spicy daikon juice that you eat while dissolving the miso, which is different from wasabi, and the walnut sauce that is so tasty you'll want to drink it all up - all of them are impressive. If you come to ski at Hakuba Happo, be sure to try them all and compare them!
